Only the Viindoo report engine is covered. Standard Odoo pivots on journal items are not filtered. Exclusion is all-or-nothing per report render. Include or exclude; no partial. It does not change the ledger. Flagged entries remain posted. Nothing to configure. Install it and the behaviour is there.
